Thai Style Mussels
Ingredients:
8 oz mussels
salt & pepper to taste
1 tbsp sesame oil
1 glove garlic, finely chopped
1 tsp green curry paste
1 tbsp creamed coconut
3 fresh basil leaves, chiffonade
¼ cup coconut milk
¼ cup water
Preparation:
Heat oil in a pan
Add garlic and sweat lightly
Add water, curry paste, coconut paste and milk
Bring to a boil and reduce by 1/2
Add mussels, season and cover for 4 minutes
Remove cover and stir
Add basil and cover for another 4 - 5 minutes
Serve immediately. Serves 2
Great with: rice, peas, carrots
