Stuffed Squid Tubes
Ingredients:
3 squid tubes per person
2 bunches of spinach, steamed and drained
1 oz goat cheese
1 oz pine nuts
1 leaf fresh basil
1 small egg
bread-crumbs to thicken
salt & coarse pepper to taste
Preparation:
Put all ingredients except squid tubes into the food processor
Add bread-crumbs then coarse chop – check consistency – needs to look like thick porridge – if too thin add more bread-crumbs
Stuff squid tubes
Use a bamboo skewer to close the top of the tube – if skewer is long enough, use one to close three of four tubes at a time
Barbeque or grill on low – do not overcook!
Serve with favourite or homemade tomato sauce
Great with: potato salad, rice, peas, carrots
