New Zealand Scampi with Scallops and Saffron Cream Sauce
Ingredients:
3 whole scampi
3 pcs fresh sea scallops
salt & pepper to taste
¾ cup whipping cream
1 pinch saffron threads
1 tbsp olive oil
Preparation:
Scald cream in a pan, reduce heat and add saffron
Reduce cream until it coats the back of a spoon nicely
Adjust seasoning and set aside
Rub the scallops and scampi with oil
Season the scallops
Grill the scampi on a hot grill for about 4 minutes per side
Grill the scallops for about 2 - 3 minutes per side
Arrange on a plate and pour over the sauce
Serves 3 or 3.
Great with: potato salad, rice, peas
