Shrimp Bisque
Ingredients:
4 cloves garlic, crushed
1-1/2 cup finely chopped onion
1-1/2 cup finely diced carrots
1/2 cup finely diced celery
3 bay leaves
½ tsp tarragon
2 tbsp olive oil
3 cups shrimp pieces
2 cup white wine
2 liter lobster or seafood stock
1 liter 35% creme
Preparation:
In a large stockpot, sauté garlic, celery, carrots in olive oil. Continue to sauté until onions are soft, add bay leaves, tarragon. Add stock and wine. Bring to a boil and gently boil for approx 10 minutes. Reduce and simmer for approximately 1-1/2 hours, then add crème and continue to simmer for another 1 hour. To Serve Bring 1 cup of the soup to a boil and add ¼ cup of the shrimp and scallops. Garnish with some finely diced red peppers. Serves 4.
Great with: French garlic bread, or robust buttered cottage style bread
