Seafood Ceviche
Ingredients:
3 oz assorted seafood (salmon, scallops, shrimp etc.)
salt to taste
juice of 2 limes
˝ tsp fresh cracked black peppercorns
˝ tsp cilantro, finely chopped
1 tbsp olive oil
Preparation:
Cut seafood into bite-sized pieces
Add all ingredients and let marinate in the refrigerator for 2 hours
Serve over salad or with cous-cous
Serves 1.
Also Great With:
Basmati rice, peas
