Sea Bass with White Asparagus &Herbs
Ingredients:
8 oz Sea Bass fillet
salt & pepper to taste
4 pcs fresh white asparagus
fresh thyme and chives
2 tbsp olive oil
˝ clove fresh garlic, thinly sliced
˝ cup balsamic vinegar
Preparation:
Blanch the asparagus in well salted boiling water until ‘al dente’
Shock immediately in cold salted water
In a stainles steel pan reduce the vinegar to a light syrup consistency
Add garlic, ˝ tbsp oil and asparagus; stir around gently and season with salt and pepper
Season the fish with salt and pepper and fresh chopped herbs
Heat oil in a pan on the stove and cook fish over med-high heat for about 3 - 4 minutes and turn over
Cover pan and cook for an additional 3 - 4 minutes.
Serve with asparagus and garnish with herbs
Serves 1 or 2.
Great with: Parsley potatoes, or potato salad, or rice.
