Grilled Milkfish (Inihaw na bangus)
Ingredients:
1 whole Bangus (milkfish) – about 2 lbs
1/8 tsp. pepper
½ cup tomatoes, chopped
2 slices lemon
¼ cup onions, chopped
1 ½ tsp. salt
2 green onions
Preparation:
With a sharp knife, cut along the back of the fish and remove the backbone
Rub fish inside and out with lemon slices and salt and pepper
Mix tomatoes, onions and green onions
Stuff fish with the mixture through the back opening
Wrap in foil and grill over live coals until done – about 15 minutes on each side

Great with: parsley potatoes, or potato salad, or rice, and red beets, peas
