Mahi Mahi with Pinenut Crust and Jalepeño Lime Sauce
Ingredients:
8 oz Mahi Mahi
salt & pepper to taste
2 tbsp pinenuts, toasted and crushed
2 tbsp simple syrup, (dissolve 1 tbsp sugar in 1 tbsp water and bring to a boil)
1/2 Jalepe?o pepper, sliced with seeds
juice of 1 lime
1 tbsp olive oil
Preparation:
Add jalepeño to syrup and bring to a boil
Simmer until reduced by ½
Remove from heat, add lime juice and set aside
Heat oil in a pan
Season fish and place in the pan meat side down for 2 minutes
Turn fish over and press the crushed pinenuts on the fish
Place in a 375ºF oven for about 6 - 7 minutes
Remove from oven, place on a plate and drizzle with the sauce
Serves 1 or 2.
Great with: parsley potatoes, or rice, and peas
