Curried scallops
Ingredients:
16 oz sea scallops
salt & pepper to taste
4 tbsp peanut oil
1 clove fresh garlic, minced
¼ cup onion, minced
1 tbsp curry powder
½ cup chicken stock
½ cup peas
½ green onion, slivered
Preparation:
Season scallops
Heat 2 tbsp oil in a large pan
Add scallops and cook until almost done ( about 5 mins) then remove from the pan
Add remaining oil to pan and heat
Add garlic and minced onion; cook for 45 seconds
Add curry, stir, then add stock
Bring to a boil and reduce by at least ½
Add scallops and reheat – serve immediately
Serves 2.
Great with: Parsley potatoes, or rice, and peas.
