Double Crusted Haddock
Ingredients:
8 oz haddock fillet
salt & pepper to taste
1 cup canola oil
1 cup flour
1 tbsp Old Bay seasoning
3 eggs, cracked
6 oz water
Preparation:
Combine eggs and water in a bowl
Season flour with Old Bay and divide between two plates
Heat oil in a deep pan
Season fish with salt & pepper
Dredge fish in flour mixture, then dip in egg wash and dredge once more in flour mixture
Fry fish in oil for about 4 minutes and turn over
Cook for another 4 minutes
Serve immediately with tartar sauce and lemon
Serves 1 or 2.
Great with: Parsley potatoes, or rice, and red beets
