Calamari Salad
Ingredients:
½ lb squid rings
1 lemon, juiced
salt to taste
½ cup chopped white onion
½ cup chopped celery
3 cloves garlic, crushed
2 tablespoons Italian parsley, chopped
½ cup olive oil
¼ cup red wine vinegar
Pinch thyme
Pinch basil
Pinch oregano
Preparation:
To a large pot of boiling water, add lemon juice and salt. Add squid rings and cook for about 1 1/2 to 2 minutes. Drain. Combine onion, celery, garlic, parsley, olive oil, vinegar and herbs with cooked squid and serve at room temperature or cool. Serves 4.
