Breaded Turbot (or Sole or Cod)
Ingredients:
1½ lbs firm-fleshed white fish fillets (turbot, sole or cod)
¾ cup butter melted
2 tbsp lemon juice
1 cup dry breadcrumbs
½ cup grated Parmesan cheese
Preparation:
Preheat oven to 350º F
Combine butter and lemon juice in a shallow bowl
In a medium bowl, mix together breadcrumbs and Parmesan cheese
Dip fish into butter mixture; roll in breadcrumbs
Bake 15 – 20 minutes or until it flakes easily with a fork
Serve sprinkled with parsley or extra Parmesan
Serves 4 - 6.
Great with: parsley potatoes, basmati rice, peas, carrots or red beets
