Beer-Battered Blue Cod Filets
Ingredients:
2 pounds skinless, boneles Blue Cod fillets (2 - 4 oz each), or Cod, Hake, Halibut
1 Tbsp. lemon juice
flour for dredging filets
½ cup peanut oil
salt and black pepper to taste
Batter:
1 cup flour
½ teaspoon salt
¼ teaspoon cayenne pepper
1 cup beer
Preparation:
Sprinkle Blue Cod Fillets with lemon juice and roll in flour seasoned with salt and pepper. Prepare batter by combining flour, salt and cayenne pepper, then gradually blend in beer until thoroughly mixed. Let sit for at least 2 hours. Heat oil in deep fryer to 375º. Dip filets in batter and fry until golden brown (4 - 5 minutes on average). Drain on paper towel to remove excess oil. Serve with hot sauce or tartar sauce. Serves 4.
