Zesty Baked Pickerel Fillets
Ingredients:
4 - 5 lbs pickerel or walleye fillets
3 large onions, sliced
peppers (1 red, 1 green, 1 yellow) sliced
1 cup zesty Italian dressing
1 cup sundried tomato dressing
Feta cheese
Preparation:
Grease the bottom of a large glass pan and layer 2/3 of the sliced onions (separated into onion rings). Place pickerel fillets on top of the onion rings. Mix 1 cup of Italian dressing with 1 cup of sundried tomato dressing (blend with a whisk) then pour mixture over fish fillets. Top with remaining third of sliced onions and sliced peppers. Cover dish and bake for 25 minutes at 350°F – uncovered for the last 10 - 15 minutes. Remove and Sprinkle with Feta Cheese. Serves 8.
Great with: Basmati rice, or baked potato, with red beets, carrots, or salad.
